Yak chaar

Chaar is a delicious meat delicacy, shaped like a large salami. However, unlike the latter, the process of preparing chaar is slightly different. We use only brisket meat, which is cut into thin slices and, when stuffed into a casing, placed in layers, alternating layers of fat and yak meat, which gives the future dish special notes inherent in game. Afterwards the delicacy is aged for 100 days. The result is a treat with a rich taste and multi-dimensional texture, where a marble pattern can be seen on the cut.
