Altyn kabyrga Talas

Altyn Kabyrga is an ancient Kyrgyz meat delicacy, the recipe of which is a unique heritage that has survived to this day. It is a horse rib with a single piece of meat of the highest quality with a layer of fat, corresponding to a thick edge, entrecote. The meat from this part is the juiciest and softest. Usually the meat of young horses 2-3 years of age is consumed; the best is considered to be the meat of a 9-10 month old foal or a one-year-old groom.

The drying process takes from 90 to 120 days. The rich taste is achieved through the selection of selected horse meat, grown in the high mountain meadows of the Tien Shan at an altitude of 3200-3500 m, to which mountain salt is added and allowed to rest in a cold room for 24 hours, and then kept in a humid and open space near the river 17-26 days.

This delicacy is an easily digestible dietary meat containing a large amount of complete protein, optimally balanced in amino acid composition.
